Ingredients:
- 500g shallots, thinly sliced
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 6 cups vegetable broth
- 1/2 cup dry white wine
- Salt and pepper to taste
- Baguette slices for serving
- Gruyere cheese, grated, for topping
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
It will take about 15 minutes of cooking after adding the sliced shallots until they turn caramelized
Add the minced garlic, dried thyme, dried rosemary, and bay leaf, and stir them in
Cook for two more minutes
Add the white wine and vegetable broth
Keep the heat low and let it cook for 20 minutes
Add pepper and salt to taste
Warm up the broiler
Pour the soup into bowls that can go in the oven
Top with slices of baguette and grated Gruyere cheese
Put the bowls on a baking sheet and broil them until the cheese melts and turns golden brown
Enjoy while hot!
