Vegan Lentil Walnut Tacos



These Vegan Lentil Walnut Tacos are a great choice for Cinco de Mayo parties because they are high in protein and taste great. The lentils and walnuts give the dish a hearty texture, and the spices give it a tasty kick. Add your favorite fresh toppings to make a meal that fills you up.

Ingredients:

  • 1 cup cooked lentils
  • 1/2 cup chopped walnuts
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Toppings: shredded lettuce, diced tomatoes, avocado slices, chopped cilantro, lime wedges

Instructions:

In a skillet, heat olive oil over medium heat

Add onion and garlic, saut until softened

Add cooked lentils, walnuts, chili powder, cumin, paprika, salt, and pepper

Cook for 5-7 minutes, stirring occasionally

Warm tortillas in a separate skillet or microwave

Spoon lentil walnut mixture onto tortillas

Top with shredded lettuce, diced tomatoes, avocado slices, and chopped cilantro

Serve with lime wedges on the side
