- 1 cup gluten-free all-purpose flour

Instructions:
Preheat the oven to 350F 175C
Line a baking sheet with parchment paper
In a medium bowl, whisk together the gluten-free all-purpose flour, baking powder, and salt
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the egg, vanilla extract, and orange zest until well combined
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Fold in the dried cranberries into the dough
Using a cookie scoop or your hands, form small balls of dough and place them on the prepared baking sheet
Flatten each dough ball slightly with the back of a spoon or your fingers
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
