Ingredients:

  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1/4 cup plant-based milk
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 cup finely chopped onions
  • 2 cloves garlic, minced
  • 1 tbsp vegan butter

Instructions:

In a large mixing bowl, combine mashed sweet potatoes, flour, plant-based milk, olive oil, salt, pepper, garlic powder, and onion powder

Mix until a dough forms

Knead the dough on a floured surface until smooth, then wrap it in plastic wrap and let it rest for 30 minutes

In a skillet, heat olive oil over medium heat

Add onions and garlic, saut until translucent, about 3-4 minutes

Remove from heat and set aside

Roll out the dough on a floured surface to about 1/8 inch thickness

Use a round cutter or glass to cut out circles of dough

Place a small spoonful of the onion and garlic mixture onto each dough circle

Fold the dough over the filling to create half-moon shapes, pressing the edges to seal

Bring a large pot of salted water to a boil

Cook the pierogi in batches for 3-4 minutes, or until they float to the surface

Remove the pierogi with a slotted spoon and transfer to a plate

In the same skillet used for onions and garlic, melt vegan butter over medium heat

Add cooked pierogi and saut until lightly browned on both sides, about 2-3 minutes per side

Serve hot, garnished with chopped parsley if desired

Instructions:

It will take about 15 minutes of cooking after adding the sliced shallots until they turn caramelized

Add the minced garlic, dried thyme, dried rosemary, and bay leaf, and stir them in

Cook for two more minutes

Add the white wine and vegetable broth

Keep the heat low and let it cook for 20 minutes

Add pepper and salt to taste

Warm up the broiler

Pour the soup into bowls that can go in the oven

Top with slices of baguette and grated Gruyere cheese

Put the bowls on a baking sheet and broil them until the cheese melts and turns golden brown

Instructions:

Put the Instant Pot's lid back on and set it to Manual for 8 minutes on high pressure

Do a quick pressure release when the food is done cooking

Open the lid slowly and add grated Parmesan cheese on top of the chicken

Warm it up and serve it with your favorite gluten-free side dish

  • 3 medium sweet potatoes, peeled and diced

Place the seasoned sweet potatoes on a baking sheet that has been lined with parchment paper

Roast for twenty to twenty-five minutes, or until the potatoes are soft

Take it out of the oven and let it cool down a bit

Bring the oven temperature down to 190C 375F

Put some flour on a surface and roll out the puff pastry into a rectangle that is about 1/4 inch thick

Cut into squares that are 2 inches across

Put some roasted sweet potatoes on top of each square of puff pastry

Then, fold the pastry over to make a triangle

Use a fork to press the edges together to seal

Place the filled pastries on a baking sheet that has been lined with parchment paper, making sure there is some space between each one

If you want, you can use maple syrup as a glaze on top of the pastries

The dough should be golden brown and crispy after 15 to 20 minutes in the oven

Take it out of the oven and let it cool down a bit before you serve it

Gradually whisk in beef broth and chicken broth until smooth

Stir in Worcestershire sauce and season with salt and pepper to taste

Simmer for 5-7 minutes until thickened

To assemble, place a serving of fries on a plate, top with cheese curds, and ladle gravy over the top

Serve immediately
